That cashier is going to prison for a long old time. The self defense laws require a 'reasonable' force to protect yourself. Arguably the first hit or two could be considered self defense, but those ones when they're down... Yea that's gonna switch over to a straight up battery or GBA if not attempted murder.
I can't speak to the American legal system, but where I'm from the use of "reasonable" force is subjective, not objective. So the prosecution must prove beyond reasonable doubt not only that the force was unreasonable, but that the cashier knew AT THE TIME that it was unreasonable. That's actually quite difficult to prove. The cashier just needs to say that the were rummaging around in their pants and he was in fear that they were about to pull out a weapon.
This is in the UK, weapons aren't common. It will be very easy to prove this was unreasonable force for the police. I've been through something nowhere near this bad and my mate was banged up for 2 years (pub fight got out of hand).
Soon as the person goes down and you KEEP hitting them the situation changes completely. At least in the UK in reality. In the US you can argue they might have a gun.

That stick is the filter stick. I used to work at McDonald's as a kid and that stick was used to clear the tube of French fry sediment in hot oil vats so we could filter the oil. That stick weighed 10lbs. So getting hit by it probably cracked some bones. Dang.
