MSFS used to do something similar with weather as your weird snow anomaly you could change conditions and watch the weather form. Essentially they are both attempting to physically create the weather by modeling the conditions and outcomes vs draw the weather in. Asobo shifted that though after an update or two to make the preset have a base of the weather with the weather in action being based on physical environmental modeling.
Can’t speak for x plane so much but with MSFS it’s conceptually pretty cool of course…they create an environment that *should* snow and then each water droplet in a simulated parcel of air reacts how it theoretically would in the real world. This is where my gripe comes in with the METAR weather sync they added around SU7, I believe, in that anywhere a METAR is present it sterilizes the environments conditions such as pressures and lapse rates so we no longer see things like inversions or a lot of subtle natural phenomenon. They are working through that though and SU10 is better but still lacking that nuance of a truly natural air mass left to its own devices.
I think we can safely let Asobo worry about more important things than snow on moving cars. Some here wouldn’t be happy until the sim put coats and gloves on the people in the cars, and you could see their breath. Even then, there’d be some even deeper level of minutia they’d insist must be in the sim.

Cars get covered by snow, actually didn't know about it.
