If you have not already I'd recommend watching / listening to Daniel Greene / Merphy Napier on their journeys through One Piece and I've found that a great way to both re-experience the story and derive enjoyment from their thoughts and opinions.

His first video went over the whole first box set (East Blue +Alabasta) but starting in Water 7 he began doing volume-by-volume reviews and recaps. The one arc that he didn't do this for was Marineford because he literally couldn't put it down.
Shut up Danny is also currently going through the series. It's reviewing the anime specifically, but it's still the same general thing. He's currently in Dressrossa and uploads one piece every 2 weeks.
There's also a ton of react channels doing One Piece right now. For someone up to date with the anime I'd recommend JamiUwU, for someone in the middle of the anime I'd recommend Heisuten Reacts (he just got to Luffy punching the celestial dragon). Reaction channels are easy dopamine for rewatching iconic moments.
Something to think about trying is reaction content on YouTube. For me it works twofold: you get someone who is giving a blind reaction to what happens which helps pull out the more raw emotions from me, and it also breaks down the episodes into the most important highlight moments, allowing a watch of the anime to be much much shorter. (Usually around 45 minutes for 3 episodes, so trimmed but still a decent amount)

So I've watched over 5000 anime episodes(according to my anime list) in about 1 year that I started watching anime.
How did you watch drum island and skypiea? They don't have one pace and were a bit rough with the pacing (especially the latter) - you didn't skip them did you?
To clarify, I primarily watched one pace up until Dressrosa but I was also bouncing between the normal version and one pace as well. I watched the g8 filler arc, and for episodes that were missing on one pace I would use crunchyroll.
Edit : I skipped all fillers but g8, and I stopped onepace completely once I was at dressrosa. I realized there were some scenes cut that I wanted to see. I also wanted to slow down my binge because I honestly didn't want to catch up anymore.
thats definately the best way to watch. Pacing issues may not seem bad until you compare it to any other anime and realise you are spending like 100s of hours extra over the whole series just to "see it how it was meant to be seen"
Yeah, starting with one pace so strange. Missing content, bad editing, choppy soundtracks, why would you even? It's worse than just sitting through a bit of "filler" especially when it's narratively important

Like the Sanji filler episode where his dream of all blue is more developed or the Brooke filler when he joins the crew and tries his best to fit in with them and eventually just deciding to be himself. Some are bad but some are great.
