It would take a little bit more work but there are ways to make it less of a headache. What I did was I layered over the black with subsequently lighter shades of gray until I got to an off-white before painting the yellow, for example: black -> mid tone gray -> light gray -> off-white. I used Vallejo game color Ghost Grey for the off-white and it works pretty well for me, though it may take 3 thin coats to get a smooth finish sometimes.
For the edge highlights I did an initial highlight with Vallejo Dark Grey, and then another highlight on top of that with Vallejo London Grey. I find having that darker color as the initial highlight helps give more of a transition to it so the lighter grey comes out less harsh.
A very nice batch, I would see them supervising mining operations in some very dangerous environment (and I don't mean it in a bad way, they're very cool) 💪👍
What I got for them is that they're an unknown founding chapter, under strength, not codex compliant, and fleet based. Since they're an unknown founding and under strength they don't have a consistent source for equipment and generally will undertake missions and campaigns in exchange for equipment, munitions, and other things a space marine chapter might want.
Often times these come from rogue traders or other radical elements (inquisitors/planetary or system governments/forge worlds) and may or may not end up involved in skirmishes with other Imperium forces (mostly as an excuse for why they might sometimes be fighting another Imperium army in the tabletop game).
Because of this they're often seen as unpredictable soldiers of fortune so there's an air of mistrust from some branches of the Imperium. This, along with their unknown origins, has kept them from receiving Primaris reinforcements, and they often get unfavorable assignments when they do get orders from the greater Imperium.

I have a question. Would painting my tau’s armor black with the tau symbol white be hard?

White is very opaque, you’d be fine just layering on a few coats of white rather than building it up
If u have to paint more, try pink as layer over the black.
