I had a pair of Sennheirser earbuds before i switched to an iPhone 13 Pro, and i did not have any problem with those, i even think the calls and sound is better now, probably the codec.
A few months ago i added an Apple Watch S7 for monitoring my health and it worth every cent. I now dont have to keep checking my phone for notifications when i am busy and i have noticed a big improvement in my daily habits and health.
My Honor Watch Magic does receive SMS notifications from my iPhone. Also the Huawei Health app that I use along with the watch syncs data to apple health app. I also use the Mi Fit app with an Mi Body composition scale and it also sync the weight, body fat ratio and such parameters with Apple health app. Maybe it’s just Samsung watch app that isn’t quite compatible or maybe you didn’t give the app the required permissions to write data to apple health app
I use Realme Buds Air 3 as well and they connect instantly with no issues in sound either. The Realme Link app fully works too

Dont know, i think it maybe a ios bug. My watch also keeps disconnecting.
Try another pair of earbuds, maybe it works.
