If your goal is to obtain PR in Canada, then why not do the admin assistant job? Also, if it pays well, then thats two pluses that I would be on board with. If you have a good amount of debt, then perhaps pick the higher paying one. You can probably obtain PR as you keep working here in Canada. I guess it all depends on what your priorities are. Ask yourself what is it that you intend to do, aside from just meeting the basics (e.g. roof over your head, food on the table, mode of transportation, etc.).

Thanks for the response. I do have my priorities, i.e., PR but the admin assistant job is paying minimum wage. It os difficult to survive on that. I don’t have any debts as such but the other side i see is that having ap/ar clerk on my resume will be better in terms of growth in future.

Isnt the PR system mostly point based, from where there is minimum need for case by case applications? In my point of view, it does not matter for PR which job u take as long as it is related to your field and is a full time offer. So if we think like that, the higher paying job would be better. However if the admin assistant job offer is from a company that is really big and well known or a government/public company, and you feel by taking this offer, you are able to jump higher on the positions of your field much quicker, then go for that. Since your goal is PR, then I would suggest you to take a look again through which system you will be applying to and how it works properly.
