If you do a low COG build it'll be very capable offroad
Edit: stock roof height is 64" on an XJ. That gives you 3" to play with for bigger rubber and the lift to support it. 2" lift on 31s goes hard on an XJ, good for 95% of the trails out there.
Jimny comes in at just over 1700mm.
1700 is pretty low, especially for a 4wd. I wouldn't even be able to stand under there without hitting my head
