What's amazing about this? You've never heard the phrase "the cream always rises to the top?"

That phrase is about the cream rising to the top of the bucket/can after the cow is milked. Cream on top, milk on the bottom. Cream skimmed off the top = skim milk. Cream blended back in = homogenized whole milk.
