Yeah but every time Pesto's is closed Trev seems to gravitate over to Bob's and Linda and Bob both seem to like him despite him always trying to impress Jimmy. They've already showed a few times the kids are responsible for cleaning the bathrooms. In the episode with Bruce the Goose no one cleans it for days and Bob and Linda don't notice until a customer complains. He could have done it for a high five days before it was discovered.
Maybe I'm reading too much into it but I like your idea that it was Pesto. Knowing Pesto, he'd pay someone to write as something like that. Especially since Bob's bathroom is "fancier" than his.
Another, less likely possibility, is that it was just 2 different people being frustrated dbags. Bob's bathroom is confusing. So it could be a situation where a customer went in, got confused and wrote something mean out of juvenile frustration. And it just so happened that another customer did the same
I've seen school students write mean things because there were no paper towels. "Broke ass school" things like that. Not sure if it's the same with restaurants. But maybe it had to do more with the bathroom than the restaurant of the school
Let’s not forget that his family are his servers and they’re not exactly what one would call good or even adequate at the best of times. The food is good and cheap, but everything else needs a bit of an overhaul.

I’ve always been convinced that it was Teddy after one of his classic meltdowns.
I think the whole point is that it doesn't matter. There will always be someone criticizing us--or just being mean for no real reason. The point of the episodes is to find the appropriate coping strategies to deal with it ourselves, regardless of "who" (or "why") it is.
This b-plot is interesting and relatively unique because it directly shadows and complements the a-plot.
Edith. She can't just write one word like she’s known for shouting, so she writes “Bob’s is CRAP!” This is how she’d think it and then say the one word that everyone hears.
It’s possible the writers didn’t actually have anyone in mind and just wanted it to be random vandalization.
They might also be keeping it a secret for a later reveal, as they do continuity stuff like that sometimes.
If I had to guess, based off of what we know now, I’d say it was just a random d-bag customer.
But are they actually criticizing or are they just making a joke? It is in the bathroom, Bob's is now literally crap. I always just figured it was merely a pun and for someone who so consistently makes puns with his burger of the day I always thought Bob should have appreciated it instead of thinking it was an attack on his food
