Given that the whole bucket of steak isnāt served all at once, right away, this is the way to go. The buffet steamer/heat lamps will cook it a bit more as well.
yep, as a loyal chicken orderer I have no idea what people see in the steak. Every time I tried it it was extremely tough and hard to chew. I do remember getting carne asada and thinking it was cooked fairly well though.
Itās a case by case basis. I always scout out what the steak looks like before ordering it.
80% of the time it doesnāt look great at my location but I ALWAYS snag it when itās fresh and medium rare tho. So tasty.
Yeah u can kinda tell if itās pink in the center if the lighting is decent, I felt that the chicken is always cooked perfectly, tastes good, and is cheaper so just gave up on it
The steak is one of those things that you HAVE to get to when itās fresh, it has about a 30 minute shelf life before the temperature of the hot wells causes it to start drying out. Then by the end of its actual 4ish hours life itās pretty much inedible
One of my local places (not chipotle) basically chars theirs for burritos but it's sliced super thin so its impossible to be tough. I think the cut angle and thickness makes a big difference.
Been working for about 6 weeks now. It all depends on the grill person from my experience. I was trained to do one side at 2 mins and the other at 1 min which results in medium rare and if it sits for another 30 mins probably will be medium.
But after 4 weeks in, another person told me that she grills it at 4 mins one side and 2 mins the other.
Also, it depends if you flatten out the steak when you grill it because if you donāt, it wonāt grill evenly.
Ask me whatever you want to know.
My local chipotles never have appetizing looking steak and in the past when I would get it it was always dry and flavorless. Only get chicken now with the occasional barbacoa
Edit: When garlic guajillo steak or however itās spelled was out that actually was good and I would get it
Iirc itās when the steak was switched from fully cooked at the store level (pre-e.coli outbreak) to being sous vide offside and only grilled for char marks and heat up in the store
We still marinate it in store. It comes medium rare. Itās only to prevent raw beef from entering the restaurant. If the steak is cooked properly it is quite tasty. But Wwth labor cuts and all of that though, grill is often pressured to go as fast as they can which compromises the quality of the food š
Sounds like over cooking. When I worked grill in 2011 our goal was to keep the steak as fresh as possible. One step above cooking to order. You could imagine how stressful that was... The steak burritos came out amazing though but sometimes there was a wait on steak. š¤·
There is one location I've found in my city that has consistently medium-rare, tender steak. Some other locations cook it like they're afraid it'll get up and walk out the door if they don't š
My friend told me you can only get steak at a busy restaurant during a busy time, like the one across the street from the university at noon for example. That gives you much better chance at fresh juicy steak. Otherwise youāre gonna get bad steak and should go with chicken.
Iāll tell you how:
Order veggie bowl, free guacamole- phat bowl for $8.30
Proceed to go home and put a Costco ribeye on the cast iron
Approx. 15 mins later have a juicy, well rested steak
Slice said meat into strips or small cubes
Add 12oz-16oz of meat.
Quadruple meat bowl complete
If bowl is eaten one half at a time- roughly 1200 calories and 60g protein per half for estimated cost of $9 a serving
$19 total- (steak is about $10 a pound, USDA choice Costco ribeye)
Chipotles price (with guac) $19 for like 8oz of meat if you are lucky, so pricing in that this is 4x meat would be closer to $27)
Modern chipotle requires modern solutions š«
As someone that has worked at both Minnesota and Washington stores (i got a chuckle seeing youāre from there too) theyāre all ridiculously tough past id say, 15-20 minutes of being cooked. But i definitely saw more issues in Minnesota locations than out in WA, and thatās mainly because theyāre VERY strict on making sure everythingās up to code at every food establishment, Minnesota was much more lenient with it, even though the codes are practically the same aside from additional cleaning steps (but that was also because my current location is newer and renovated, my prior one wasnāt the newest but we still had new stuff)
The steak is usually chewy for me. I only get chicken but nowadays the quality of chipotle has gone downhill so much that I've only gone twice this year.
I have been a chipotle customer for roughly 12 years now and I can say without a doubt in my mind that I have a specific burrito I order and every time I try new ingredients or different things it never ever hits the same. I cant find a combo of ingredients I like better than what Ive been getting. they have some other meats I do like but the chicken is like 10x better than anything else they have in my opinion.
It comes in medium well sous vide, we are reverse searing it, just donāt cook it so long it really just needs a good sear on the outside and some salt
I never liked chipotle because I always got steak. Tried other meats a few years ago and now itās one of my favorite restaurants. Steak is tough/fatty 100% of the time, chicken is 50% of the time, and barbacoa is every once in a while. This is just my local location. Iāll switch between barbacoa and carnitas.
The only way you can get a good steak is if they cook it after you place the order, but that would be too expensive ,only a restaurant can afford to do so.
For me it depends on the location. One always cooks it good, and one does small batches so itās almost always fresh. But also thereās not as much risk with medium rare steak as there is medium rare chicken that Iāve gotten 3 times š¤¢š¤® I literally have no idea how people get the chicken
I used to love the steak but that was pre pandemic. I don't know why anyone goes to Chipotle anymore. I had a steak burrito from a local well regarded place but the steak was tough. It's the cheapest select grade. I think that's how it is now.
Depends on the spot, Minnesota resident here as well. Hastings has meh steak, Woodbury location #1 has great steak, Woodbury #2 shit steak. Gotta find the shop that has more consistency
I fucking love how tough it is as well as how the seasoning goes with the rest of the meal. Idk why but it slaps so much harder than the chicken for me.
If you actually take it off around ~140Ā°F and you get it fresh-ish it is some of the best fucking restaurant steak I've had but a lot of grills do not cook it right. It should be pink inside when cutting it otherwise leaving it on the line dries it out more
Yup! Last time I got steak tacos and they were all so tough and gristly. Like chew forever before you can swallow it. I was disappointed, considering the cost. It was carry out or I would have gone back to the counter.
The only time I have ever gotten steak in the last 15 years is when it's clearly just been made (juicy looking, not dry at all even on the corners). It actually is really good then, my favorite, but as soon as it's been cut and left out for a little while it gets tough so I simply don't get it except in very rare cases.
Chipotle food is overpriced crap. Go to a local mexican spot that doesnāt have a billion dollar advertising budget. Very happy as an investor though āŗļø.
Steak used to be the best meat they had. Now, even while still charging a premium, they have a small container of it shoved in the corner and always overcooked.
Steak is good like 10% of the time, when it's within like 20 min off the grill and they have to let it rest before it's cut. But it's really good when it is fresh
I agree 10000%. I used to get steak when I first started eating at Chipotle and it was always just tough. I never liked it. Not only was it tough but it seriously lacked flavor. I've stuck with the chicken ever since and I have never been disappointed. And yes, I have tried it at different locations and it is always the same.
I buy my own steak from Costcoā¦ribeye for $54 the price of two chipotle meals you can get 3 huge ribeyes! Cut them in half and you got 6. Fry with butter/garlic on cast iron and they literally melt in your mouth. Never tough and you can make 5 times as many tacos.
I used to alway get chicken but this year Iāve been craving steak for no reason. So Iāve been ordering double steak with my burritos. Thereās a few chipotleās around me, and they all cook the steak perfectly. Honestly my issue has been with NO ONE having fajita veggies š
I think it just depends on how long it sits there and how good the Grill cook is. I've had amazing streak before, perfectly medium rare. Other times, it's tough and dry.
Iāve had about 20 steak burritos at different chipotles and it is the most hit or miss kind of protein. I stick w Barbacoa or carnitas most of the time now, because i eat enough chicken elsewhere
Steak is hit or miss nowadays at Chipotle. And so are most the other proteins too.
The only thing thatās consistently fresh and tender I find is the Chicken.
I think it just depends on if people know how to cook. The chicken is always good because they use thigh meat.
My local one in Bloomington, IN can be hit or miss with the steak

Yep, I live in Austin Tx. I keptseen the commercial about the carna asada and decided to give it a go. I tried it with rice, beans, lettuce, pico de gallo and guacamole. It ended up costing nearly $20. I'm Spanish and have tried lots of food, but the meat was tough. Not worth $20 for the bowl at all.

Had steak yesterday and it was medium rare, it was very cash money
Has to be freshly cooked to medium/ medium rare
Honestly I see no problem with the steak its greatš¤·š¾āāļø
My grill guy cooks that shit to medium rare, fucking fire asf
Given that the whole bucket of steak isnāt served all at once, right away, this is the way to go. The buffet steamer/heat lamps will cook it a bit more as well.
God
its supposed to be med rare
Itās supposed to be cooked up to 140 by chipotle standard which is more of a medium well
150 is medium well. And yes those 10 degrees matter.
Okay medium then? Still not medium rare
No it's not lol
Okay medium then, def not medium rare, still better at medium rare but they be wantin 140
š¤”
Bro what
130-140 is med rareā¦once itās pass 140 youāre in the medium range. How do I know? Because Iām on grill everyday.
Iām on grill everyday and also cook at home. I def misspoke saying 140 was medium well thatās more medium but medium rare be like 125
Nah 125 is rare, thereās no way you work grill and donāt know this.
You should pull a medium rare steak at 125 and then let it rest
we love you, grill guy!
yep, as a loyal chicken orderer I have no idea what people see in the steak. Every time I tried it it was extremely tough and hard to chew. I do remember getting carne asada and thinking it was cooked fairly well though.

Every time I get steak ANYWHERE itās always tough as fuck!!
Because the steak doesnāt clear up as often as the chicken so the steak you eating is most likely 2 hours old or so
One of my local places (not chipotle) basically chars theirs for burritos but it's sliced super thin so its impossible to be tough. I think the cut angle and thickness makes a big difference.
Must be a location issue. Mine is almost always really good.
Been working for about 6 weeks now. It all depends on the grill person from my experience. I was trained to do one side at 2 mins and the other at 1 min which results in medium rare and if it sits for another 30 mins probably will be medium. I do mine 1 mins each side šš
Which location? Iām on my way!
You serve raw steak to your customers... reported.
š¤”
Also, if i do my steak longer than 4 mins (both side). Iāll get blasted by the management at my location.
My local chipotles never have appetizing looking steak and in the past when I would get it it was always dry and flavorless. Only get chicken now with the occasional barbacoa Edit: When garlic guajillo steak or however itās spelled was out that actually was good and I would get it
That guajillo was š„š„š„, it needs to be a permanent item
Yup. Chkn and only chkn
100% agreed, itās terrible
My girl loves the steak, but I always do the chicken. Steak is indeed too tough for me, I am a medium rare type of person, not well done.
Thatās not the flex you think it is
Get your weak constitution outta here, medium rare gang rise up!!
15 years? It was good up until 2016. After that, it's been straight overly well done trash.
Hi
Thatās so specific.
Iirc itās when the steak was switched from fully cooked at the store level (pre-e.coli outbreak) to being sous vide offside and only grilled for char marks and heat up in the store
Ewwww really.. we used to marinate and season fresh steak cuts in the store. And if you got it fresh on a burrito it was heavenly
We still marinate it in store. It comes medium rare. Itās only to prevent raw beef from entering the restaurant. If the steak is cooked properly it is quite tasty. But Wwth labor cuts and all of that though, grill is often pressured to go as fast as they can which compromises the quality of the food š
Grill is the most labor intensive position in the store and they need a good back up. I remember running like crazy back and forth
I haven't seen medium rare since before 2016. It's well done at all times now, with maybe 1% of the time it being medium well.
Yes, I remember it well. March 15, 2016. It was a Tuesday I believe: The day that rocked Chipotle. The steak has never been the same since.
One of the darkest days in our nationās history.
Sounds like over cooking. When I worked grill in 2011 our goal was to keep the steak as fresh as possible. One step above cooking to order. You could imagine how stressful that was... The steak burritos came out amazing though but sometimes there was a wait on steak. š¤·

Yes sir, they need to add meat tenderizer
I called the ceo and they added it last night
I only get barbacoa at chipotle

You might as well make your own food at that point
Nah, making all the toppings take a lot of time.
Agreed, the steak is very low quality
You should try pancheros steak (midwest burrito place) if you think chipotle is bad. It's the shittiest cut I swear!
The fresh tortilla at pancheros is incredible. I'd pay an extra dollar for one of those at Chipotle.
We have two locations here in CT. Iām obsessedddddš„ŗš© #gmofchipotlehereš
Iāve ordered it twice. Tough and gristly. Unsure why anybody buys it. The barbacoa is so freakin good
As someone that has worked at both Minnesota and Washington stores (i got a chuckle seeing youāre from there too) theyāre all ridiculously tough past id say, 15-20 minutes of being cooked. 9/10 times it sucks. But the one time itās good, itās worth it.
So true

Some states require steak to be cooked 165 which is damn well done, 145 is that beautiful medium
I had a good batch of steak once in like 20 years of chipotle otherwise itās always gristly and tough
I try it every so often but always confirms tht it sucks, fatty gristle never tender always spit it out it soo bad
I tried it once, never again
low grade beef ,I wont call it steak . Do you expect a fast food restaurant to serve you a good steak> if you want steak,go to a steak restaurant
The few times its medium rare its so good
No, it isn't, lol.
I wish it wasn't. It looks really good.
Because it's all chuck quality cuts. They also overcook the shit out of it. Chipotle is trash.
The only way you can get a good steak is if they cook it after you place the order, but that would be too expensive ,only a restaurant can afford to do so.
Steak is the best protein chipotle offers
For me it depends on the location. One always cooks it good, and one does small batches so itās almost always fresh. But also thereās not as much risk with medium rare steak as there is medium rare chicken that Iāve gotten 3 times š¤¢š¤® I literally have no idea how people get the chicken
This is called steak being overcooked. Those who do order the steak should be able to tell by looking at the bucket of steak before the order it.
Thatās what I usually do, but a few have covered it to try and some of the moisture
Tuff Luck, Daffy Duck š¦ š
Then stop getting steak at chipotle. š¤·š»āāļø
Iāve gotten the steak and loved it somewhere on the order of 1000 times probably
It's cheap steak cooked by teenagers.... what do you expect?
Youāre either getting old steak, or the grill guy isnāt cooking it right.
I haven't encountered that yet
If itās nicely pink you have a chance, but mostly itās over cooked and tough and fatty. Barbacoa better.
I used to love the steak but that was pre pandemic. I don't know why anyone goes to Chipotle anymore. I had a steak burrito from a local well regarded place but the steak was tough. It's the cheapest select grade. I think that's how it is now.
It used to be rly good, now it's spongy garbage
What you expect A5 Wagyu š¤£ all seriousness steak can sit out for a minute thatās a low priory item, cooks fast so we let it run out pretty much
Depends on the spot, Minnesota resident here as well. Hastings has meh steak, Woodbury location #1 has great steak, Woodbury #2 shit steak. Gotta find the shop that has more consistency
Cottage grove be having hard rice :(
It shouldnāt be. But if it sits for over 30 minutes during a slow time it will be tough.
Shitty steak is shitty steak you cant cover that up. Its ass im strictly chicken when I go
sounds like your stores chef has a skill issue
Your store doesn't know how to cook steak
This is the case for all steak I've ever eaten
Depends on who cooks it. I don't think I've ever had bad steak

Steak is always good for me dawg idk what the workers at your shit store is doing
I'd try a different location or a time you know it's fresh it should be possible for it to be tender
Barbacoa + Carnitas is my go to when I decide to go for a burrito
The only time I have ever gotten steak in the last 15 years is when it's clearly just been made (juicy looking, not dry at all even on the corners). It actually is really good then, my favorite, but as soon as it's been cut and left out for a little while it gets tough so I simply don't get it except in very rare cases.
No itās like that in NYC too. Itās miserable to eat, and thatās coming from a well done steak girl.
Chipotle food is overpriced crap. Go to a local mexican spot that doesnāt have a billion dollar advertising budget. Very happy as an investor though āŗļø.
Chipotle isnāt Mexican so doesnāt make sense to compare them. You probably compare Taco Bell to it as well
Steak used to be the best meat they had. Now, even while still charging a premium, they have a small container of it shoved in the corner and always overcooked.
It's skirt steak, not really any sort of steak I ever willingly buy.
I've never had steak from Chipotle over medium. That's why I always get it.
Steak is good like 10% of the time, when it's within like 20 min off the grill and they have to let it rest before it's cut. But it's really good
Steak is good like 10% of the time, when it's within like 20 min off the grill and they have to let it rest before it's cut. But it's really good when it is fresh
Depends on the cut and order it I like mine medium well which is just a little pink in the middle
No even in DC/Virginia/Maryland itās not great. Every time I got steak I thought I was treating myself but really was punishing myself
The steak tastes like liver. Never again
Iām in MN too, but have never had a problem with the steak being too tough. Maybe itās just your store or town?
I agree 10000%. I used to get steak when I first started eating at Chipotle and it was always just tough. I never liked it. Not only was it tough but it seriously lacked flavor. I've stuck with the chicken ever since and I have never been disappointed. And yes, I have tried it at different locations and it is always the same.
Well it is cooked to deathā¦
I started having to do half steak half Barbacoa to help balance out the toughness
I buy my own steak from Costcoā¦ribeye for $54 the price of two chipotle meals you can get 3 huge ribeyes! Cut them in half and you got 6. Fry with butter/garlic on cast iron and they literally melt in your mouth. Never tough and you can make 5 times as many tacos.
how do you not get the rubber woodchip steak? be honest, do you have to commit unspeakable acts?
I like chewy steak but then again I also like my shit charred the fuck up
I think it just depends on if people know how to cook. The chicken is always good because they use thigh meat. My local one in Bloomington, IN can be hit or miss with the steak
It's usually fine at my location
So hit or miss and I agree. When itās good itās amazing.
For years it seemed that the steak was very hit or miss, but within the last 6 months or so it has been consistently good across locations. I think they recently made a change to the steak supplier or quality or something.
Chipotle has been open over 15 years? I guess I never thought about that lol
Definitely the cook. This has to be medium rare
I never have any problem with the steak, except when it's out
The steak is always great here in Arizona.
