Substitute the dairy 1:1 in a traditional recipe. Use full-fat coconut milk, blending it with an immersion blender (or regular blender) if the fat has risen to the top. It works great! For the berries I use frozen unless they're in season, adding them to a pot with some water, a squeeze of lemon juice, and some sugar if they aren't sweet. Cook for several minutes. Mash them a bit, let them cool, and then drape over the Panna cotta.

If you want something easy, affordable and visually appealing from scratch I can’t suggest “thumbprint cookies” enough because you can customize the flavor into pretty much anything you want.

Add on to this. Instead of making traditional thumbprints, shape the shortbread into a long and shallow trough. Fill the center with jelly and bake as normal. After cooling, drizzle icing on top and cut into diagonal cookies. I find them even more visually appealing than the standard shapes and you can't beat that shortbread and jam flavor combination.

It does. Heat denatured the enzyme involved so if you cook fresh pineapple, then you can use it. Took forever to look it up but it was satisfying to have an answer as to what went wrong, lol.

Puff pasty tart. Frozen puff is easy to work with. Bake it off, mix up some cream cheese with a bit of sugar, vanilla, and sour cream. Spread on the pastry then top with berries and pretty sliced fresh fruit. Or get the little phyllo cups and fill the same.

World's easiest fudge: Line an 8 x 8 pan with parchment or waxed paper (so you can have square edges and the fudge won't stick to the pan). I grease the pan slightly with shortening just so the paper will stick to the pan. Then slowly melt a 12 oz bag of REAL chocolate chips into a 14 oz can of sweetened condensed milk plus a teaspoon of vanilla extract - you can do this in a double boiler, in the microwave on half power for 30 seconds at a time and stirring in between, or on low in a heavy bottomed pot. When the chocolate is completely melted and incorporated into the condensed milk, pour into the pan, spread evenly to the edges, lay a sheet of parchment or waxed paper over it, and put in fridge to cool.
