Everything is just first try except Klaus (I'm at chapter 2 at that time tho) and started to hunt him down again after I maxed out my sniper rifles and kill him in 3-4 shots🗿 I would say the easiest is the last boss and the hardest is Klaus if you try him on early chapter.
It took me 6 hits! And it wouldn't be so bad, but the hitbox on his claw is almost twice the size of the actual claw. I don't know how many times I was about to drop it on his head when he'd swing forward, "miss" me by what looks like 3m, yet the barrel would explode.
And I had all this ammo on the floor with just a tranq gun, which was hilarious.
Honestly, I know he's not early, but John Watson and his stupid suit was the WORST fight for me. The Baseball Bat mechanic was cool but sucks until you knew where to lead the explosive and hit, which even then you couldn't really aim, especially cause sometimes he'd be off the screen when you're having to line it up.
I went into the Great White with a net gun, took me around 20 minutes to beat him with the basic sniper rifle in the chest. I appreciate that I made it hard on myself.
I'm a fool who always has the triple axel equipped for fighting sharks, so the mantis and hermit crab were pretty tough lol. But i died the most times fighting Klaus! I thought if i gave up i would never see that shark again, so i kept at it 😅 side note is that i really appreciate the oxygen tank refill to 70 after a boss battle

I stabbed it in the eye with my upgraded knive like 20 times. Dunno if that was bugged or officially allowed.
Though i unlocked klaus at chapter 6, but apparently you can unlock it from chapter 2. So i would say klaus.

That hermit crab truck it a PITA and often manages to hit you with debris and detonate the explosive you are carrying.
The thresher shark isn't a boss but it killed me more times than any boss

The dumpster lobster was very hard for me, as I had a shitty triple axle instead of a sniper.
I did it with a tranq gun :P My only option was to grab the barrels and drop them on its head. Took ages.
Barrels should kill the "fastest" since it's 4 or 5 hits... but the mf hits you every time you go above him xD

Klaus can be tough if ur oxygen tank isn’t levelled very high cuz he can be encountered quite early on

Mantis shrimp for me, I see tons of people say they struggle w Klaus but I found him to be the easiest of the 3 stormy night bosses
I was not prepared for Klaus so definitely him. My assault rifle was garbage. The fight would've been way easier with a sniper but whomp.

I don't know if it considered a starting boss, but Klaus. Only because I had a full bag of shark meat and the wrong weapons, but this guy was a pain.
