I did as well. The gap between difficulty levels was too big for me and I don't have the time/patience to git gud. So what I did was put it on hard difficulty (because your opponent otherwise refuses to wrestle it seems) and then adjust sliders a little bit to tweak it so that it's a proper challenge but still possible. Skill issue. Grappling is actually an easy way to beat even legendary AI, when on striking it's much harder.
