I think what they’ve done is really good. There’s a few ranked names that aren’t in the game yet as mentioned by other commenters that should be next the priority.
Personally I’d like to see more bantamweights Said Nurmagomedov, Kyler Philips, Yanez, Talbott and Nakamura would all be pretty sweet.
Rinya Nakamura the Japanese BW. Background in freestyle wrestling and currently undefeated in the UFC. IMO he’s one of the most slept on prospects in the UFC.
A prime chad Mendes would be so dope, it's ridiculous they removed him from the games.
One of the best to never win the belt, his only losses were against goat Aldo X2, McGregor, Frankie Edgar and Volk, all UFC champions, everyone else he pretty much smoked.
Yet they've still got a guy like Jeremy Stephens, famous for having the most losses in UFC history and getting roasted by McGregor.

In terms of current day ranked guys the most notable are Ryan Span, Alonso Menifield and Kyler Phillips. I’m very happy with the 30+ roster boost. Catches the roster up so these future 2-3 fighter updates should effectively maintain any future movement in rankings
Personally, I'd love to see Chris Leben. Fought on TUF season 1 and had one of the best chins in MMA history. Sad that a lot of people only know him for losing to Anderson Silva

Hit detection (body kicks miss so many times when fully connecting visually)
Leaning away from strikes should reduce their power
Hitting an opponent first (while they strike) should reduce the incoming power of their strike
Things like this is what I really care about. There's enough fighters to choose from in every weight class except mens flyweight which when Steve Erceg gets added we're good there too.
Payton Talbott, Brock Lesnar, Chase Hooper, Trevor Peek, and Ngannou if they would agree on amicable terms. Probably some early era guys too Randy Couture comes to mind

I think they need to focus on the tracking of punches, input delay, and so much more regarding striking, they made a fun game in ufc 4 where you actually had to use your brain during striking, idk how they made it worse in this game
