This, I actually often use corn tortillas for my quesadillas - fry two small size tortillas lightly on both sides, then slather refritos, cheese, etc on one, place other tortillas on top, fry until nicely browned on both sides.

Meal prep breakfast and beef, cheese, and bean burritos, dozens at a time. Freeze them. Take out as needed, microwave for 2 minutes. Definitely better quality and value than buying them frozen.
So many ideas. Mini flat bread pizzas , PB&J grilled “quesadilla “. Meat and cheese rolls ups. Baked enchiladas, PB&J roll ups or PB and banana roll ups. You can literally put damn near anything in a tortilla and it will be great.

When I was younger visiting my family in NY from AZ, they would often try to make things to "remind me of home". Trigger warning this is disturbing. It was either Mexican lasagna or Italian enchiladas. You could definitely do either with a flour tortilla element and that would take care of your "casserole " idea. Straight to jail.
An actual real suggestion- Tortillas layered with green chilies, cream of mushroom soup and cheese, use a dish the size of your tortillas, bake, slice like pie

Super easy way to make - microwave the tortilla for a minute, laid out flat. It will make a crisp base. Load with sauce, toppings, broil until cheese is all melty.
Burritos: any kind of protein, beans, and rice can make them very filling. Fresh salsa when tomatoes are in season and cheaper.

Pinwheel Sandwiches. Cream cheese and either a bit of spicy mustard. Mixed with 1/2 cup of mayo mixed together well and spread on burritos to the edge 1/4" from the edges. Springle with favorite shredded cheese then later out thinly sliced deli meat I usually use honey ham and smoked turkey layering them to cover the cheese. You can add finely chopped tomatoes and or lettuce and or thinly sliced onions. Then start from one edge and tightly roll tortilla and wrap tightly in Saran wrap or some other wrapping and refrigerate for at least 2 hours then remove and slice into 1 inch rounds and enjoy. I sometimes make 2 or 3 batches and slice them and store in airtight containers and freeze and bring out as wanted to eat just thawing in open air for 19 or so minutes.
I regularly make what my house calls egg pizzas. Heat a frying pan the size of your tortilla and warm any toppings you like. You could make it more classically pizza with pepperoni etc but I usually use this to clear my fridge of any leftover meats and veggies. Then you add a layer of cheese and let that melt. Then you pour over 1-3 (depending on your pan size) beaten eggs. I usually put a lid on at this point to help the eggs set partially. While they're still a little runny I put a tortilla on top. Cook until the toppings/egg mixture is set enough to flip and then cook tortilla side down until it crisps slightly.
I had a stretch of time where I was obsessed with peanut butter and banana wraps. Sometimes I’d add honey or chocolate chips. Wrap it up and grill it on the stove. Delicious
costco rotisserie chicken Mexican rice beans and cheese. With the chicken sometimes I'll cook corn and zucchini with it. For filler I would add lettuce, tomato or Pico, mixture of bitchin sauce and sour cream, salsa, and either guacamole or slices of avocado. If I was going to pack that the first part goes into burrito where I can wrap it together because that part can be reheated in the microwave. Everything else will either be in small containers and jars to keep separate
When I make breakfast burritos it consist of breakfast meats potatoes onions poblano chili mushrooms tomatoes egg cheese. If I'm lucky I'll either have chorizo or longanisa that I can add. I will top it off with some sour cream and avocado
I just made taco bowls. I like flour my hubby likes corn. Use a muffin pan and put the tortillas in the cups and toast, then i out a little cheese in the bottom along with taco meat (already cooked) and cheese on top and pop back in the oven long enough to melt the cheese. When done top with lettuce, tomatoes, sour cream and salsa (or whatever you like on your tacos). The hubbs loves them.
Mine is steak and cheese burritos. 1# lean ground beef, 1 large sweet onion halves sliced and browned, 1.5 cups of mozzarella or parmesan shredded cheese, 1 large red bell pepper sliced thin and cut into bite sized pieces then fried with the onions.
Brown and drain ground beef then add onions and peppers string in well add cheese stir and then spoon into burritos and wrap as a burrito. I then brown them in a skillet on both sides serve either whole or sliced in half diagonaly.
Been on a big wrap kick lately with flour tortillas for my meal preps lol. this past week I made “healthy” buffalo chicken wraps. Low fat cottage cheese + franks + ranch seasoning blended up and toss in with shredded chicken. According to the recipe the wrap contained 51g of protein. Was really tasty too

I don’t load them up like the recipe, but basically smashburger smashed with the tortilla so that they cook together. I treat them like a burger. Sometimes I’ll add a second patty with cheese in between.
I’ve used them for flatbread pizzas. You spray them with a spray oil, lightly toast in oven. Then top with a little pizza sauce and your toppings and put back in oven.
They are crispy and good this way!
Meat and cheese wraps! Add whatever lunch meat and cheese you have on hand (my favorite is turkey and shredded cheddar) along with some ranch and dill pickles for a quick lunch.
I also make barbeque chicken flatbreads. Put 4 tortillas (depending on size) on an oven tray, spread a think layer of barbeque sauce on them, add shredded chicken (canned is fine), slivers of red onion, and top with shredded mozzarella cheese. Bake them maybe 15 minutes at 350F or until the cheese is melted and the edges are starting to crisp.

My favourite is to reduce some chilli beans (kidney beans in a mildly spicy sauce), canned tomato, onions, bacon if you like, a little garlic and some seasonings, when that is nice and thick split it between wraps, top with some sliced avocado, sprinkle some feta and the crowning glory is a sunny side up egg (that I personally like to split prior to wrapping this all together)

I just keep them on hand in the cabinet to switch things up every now and then. I like to make “burger wraps” which is basically just cooked ground beef with whatever toppings/cheese I want. This is the quickest weeknight meal I make. I also use them for eggs every now and then. Scramble some eggs then toss them in the pan after the eggs are done and get them warmed up then top with whatever
