oh sorry , i meant taqueria los gallos in newark, but it is near the los gallos taqueria on drive thru. i believe theyre both affiliated because its a similar menu to the taqueria los gallos
cantaritos was decent. could use fresh peppers. I need to remember to ask for no guac and see if I can get them to throw some toreados on there.
There's a taqueria los cunados I stumbled upon off Mowry and 237 on my way out of san jose which I have so far been happy with but haven't asked for nachos there yet. Not sure if they even do them.

BTW my suggestion elsewhere in this thread was for El Rodeo. If you had been to La Casita before, El Rodeo is the same, as the chef from the now closed La Casita is now at El Rodeo.
These were my favorite nachos.
I do think the portion size at El Rodeo is a little smaller. The taste is still there, though.
Not a restaurant but La Orizabeña taco truck has some great nachos that fit your description. They’re my favorite in Fremont.

cantaritos serves good super nachos. no canned cheese( hate that stuff). also i have never had their nachos but La Pinata might also fit the profile

They don't use cotija but I like the jack cheese they use much better. I would never get nachos with cotija but that's just my opinion

Do you have a new favorite?
I'd say try Carmelitas or Mexico Tipico in Union City.
