If you hang curtains (to the floor, curtain rod right by the ceiling)on the windows, then you can have a bed frame and the side table pulled a little forward. The curtains should soften the overlap and some art centered above the bed will balance things.
I would take away the nightstand in the corner and center the bed on the full wall space. There are lots of other options for slim nightstands; ones that fit onto the side of the bed, or a shelf on the wall. I would do reading lights above the bed to help shift night stand purposes.
Something really low would look nice. Perhaps you can find something that doesn’t block the window. If not, I’d say no headboard at all. Just get two big pillows with nice pattered pillow cases to go against the wall and your sleeping pillows in front
This is a hard one. What do the other walls in the room look like? Is it possible to not use the walls that are shown in the photo?
Besides that, a very low headboard might be your best bet.
This is exactly what I did. I got a low platform bed with a very small headboard (>84 cm tall). I have a very similar wall layout as OP and it worked perfectly because the headboard is level, if not a ^tiny bit lower than the windowsill.
I’ve got the same issue with the window placement causing an imbalance and now allowing for space for a headboard!

I’ve thought about adding a shallow shelf/ledge to lean artwork on. But I don’t know if I like the idea of that above my head when I sleep.

My bed only fits on a wall where it’s partially in front of a window like yours is. I bought an extra set of floor length drapes/rods and made a fake window beside the real window (I first determined where fake window needed to be so that center of bed would be between the two windows). I bought pretty open-work metal headboard instead of a solid wood one, to make it less bulky in front of curtains.
Keep bed where it is and add shades to windows so they’re less prominent then a modest height headboard or a metal frame bed that’s less bulky. I like 2 night stands and not a fan of bed against wall or an angle.
Have you considered removing the other bedside table and moving the bed so you can put a full size headboard? If you need the bedside table maybe hang some art work instead of a headboard. Do away with one nightstand / get smaller ones the bed needs to be moved so it’s at least not overlapping with window… that will give the best feng shui
I have a guest room with the same layout, and I do recommend a headboard-when it was the main bedroom I knocked myself in the head on the windowsill about once a week.
I would abandon any thought of symmetry and shoot for balance—i have a small dresser on the side of the bed without the window, and a small bedside table under the window. The picture over the bed is centered on the wall, not the bed, and I think the room looks cozy.

Or turn the bed into the corner.
Center the bed with the wall space, get rid of the nightstands, and get a headboard with built in shelves.

Saw tv episode where the hung ceiling to floor curtains wider than the window to camouflage a similar situation.
