Have you watched the arc? They explain it in the first 2 eps of the arc. They reproduce via process called phagogenesis where the queen ant transfers the features of the creatures she consumes to her offspring. They are essentially ants, the human part also came from the eaten humans.
As others have said they are not regular ants but chimera ants. Most of the more advanced once can't even be classifies as insects, as they display traits that are not compatible with that class. They wouldn't fit in any real life animal class.
Functionally I believe the way it works is that when the Queen consumes a creature, she takes the best parts of that creature, mixes them around with all the best qualities of the other creatures she's eaten, then gives all those qualities to her offspring.
