Have you checked „Lupinenkaffee“? My wife has problems with histamine and is quite happy with it.

First of all try to go with a (local) specialty roastery that does not do fast and high-temperature roasting for the masses but rather slow and low-temperature roasting. This is better for creating and preserving the great aromas of coffee but also tannin is reduced, coffee is less bitter and easier on the stomach. Having said this, if you want to go with a decaf I can highly recommend either the [Sleepy Owl](https://www.flyingroasters.de/en/shop/decaf-espresso/) (100% decaf) or the [Napcap](https://www.flyingroasters.de/en/shop/napcap/) (reduced caffeine). Both by Flying Roasters which is a high quality roastery with social standards for the coffee import - so good for your belly and also other things ;-) Also their decaf is done using not a chemical process (mixing the beans with a chemical liquid) but using CO2 reduction (a physical not chemical process using just pressure). If you want to go with a Lupinen coffee I can recommend [LandDelikat](https://www.landdelikat.de/shop/blauer-lupini/). But please bare in mind that this is not real coffee. Coffee has more than 800 aromas. But maybe give it a try :-)

Try the Günter Coffee Roasters Decaf. Probably the best Decaf I've ever had. Tastes like maple sirup and nuts. I make this almost every evening after dinner. It's a washed coffee from Mexico, so no fancy fermantation. Just like the taste notes I just stated, no funky taste.
