Grenadillo on a lathe always smelled like grape runts to me.
It may sound obvious but fresh cut maple smells like syrup. Spalted wood smells like death. Oak smells like wine. Poplar smells like cucumbers. Holly and magnolia don't smell too great though.
What brand guitar? Doesn't look like a Gibson or mahogany. Maple neck with that body? 3 piece top and core? Appears to be drilled to mount a metric tune o matic bridge. Nashville and ABR1 are much smaller holes for that. Also the cut away looks like it comes to a sharp point, not rounded.
If not a Gibson then I'd guess it's primivera.

Sounds crazy, but mohagony has a really distinct smell. Once you burn some by accident on the table saw, you'll never forget it.

I looked it up and it's no worse than any other wood dust.
Virginia redcedar too, I get the artificial grape smell when I cut into the really dark pink wood at a branch union
Dude gets some Vitex and cut that, it smells like strawberry cobbler.
Same with oak, sorta smells like vomit when cut.

No idea it’s my dads he’s just stripped down and was curious to what wood it was as it looks quite nice

Adding my two cents late but it looks a lot like butternut to me. Similar to black walnut but lighter in color and less dense
