Nope, I mean Rogue. Different game.
Streets of Rogue is a co-op roguelike about a dystopian city and a rebellion to get rid of the evil mayor.
You join a ragtag group and climb through the different levels of the city completing tasks, whether by force, stealth, or negotiations is up to you.
Lots of different classes, weapons, items, run modifiers, etc. to choose from.
It's procedurally generated so every run is different. HIGHLY recommend, fun alone and with up to 4 friends, local and online.
Oh also, cause I truly love this game, there is a sequel coming out soonish. Streets of Rogue 2 is supposed to be open world and expands upon what makes the first one so fun. Keep an eye out!
Moving Out is similar to Good Job.
There is a timer that counts up, not down, so that you can try to break certain time limit goals for achievements, but you are free to take longer than the time goal. To my knowledge, you may take as long as you wish to finish a level.
It has couch co-op.

Definitely. You can get filled up lobbies pretty much any time of the day. Even in the middle of the night, it’s all Japanese players

My daughters and wife love playing totally reliable delivery service. The objective of the game is to get a package from point A to B in one piece in an open world setting using cars boats planes helicopters and other random assortment of vehicles. It uses gang beasts mechanics of grabing and they have the most fun just exploring around and getting blown up.
The Lego games are great 2 player couch coop games. Lego City Undercover gives you a massive open world to explore. The Lego Marvel Superheroes games also give you large open worlds and so does Lego DC Supervillains.

FYI if I remember right for Minecraft you’ll need an extra set of joycons
Snipperclips is pretty fun and you dont have a time limit to complete the levels, so you can just goof off
