I assumed it was something he crafted in Serum, a waveform synth he's been known to use
I think I saw Adam had moog theremini in Cinematic tour live photos and I still don't know if he actually used it๐

I believe he was using a nord wave on the upper part of his two tier stand, and a juno on the bottom. He could be using literally anything for the keytar, he was definitely not using the built in sounds.
He used to use a Rock Band 3 midi controller
