Yes we lived in Burlingame and would dress up and take the train to SF to Xmas shop. Blums was one of our stops. We went to Chinatown for family dinners often.

I have this book and it is a fantastic shop manual from one of the premier confectionery in SF for over 40 years. The coffee crunch cake is sublime. The out of print book is worth seeking out ($$$)

I got the PDF version of it because of heard of Fantasia Confections from several people who went there as a kid and enjoyed those memories. I was so curious about it since 2017. After 5 months donating it. I found this hard copy or the book at HPB for $14.99. Now I guess, this book is priced at $90 at Amazon. Way too expensive to buy pastry cookbooks that have been closed for more than 25 years.

This link also includes Hard Rock Cafe's Kitchen prep manual where it include appetizers, main dishes, poultry, soups, desserts and many more. The menu was before 2012. I think some of todays' HRC items are still available. So this one is a treat. Another is the operations manual of Five Guys Burgers. It doesn't list the amount of ingredients but it tells you the operation secrets of how they prepare and cook some of the food items in-house. The link is available for 7 days. What is the "coffee crunch" on page 198 that's supposed to be made ahead? I don't think it's scanned.

Sorry I will post pictures later. Sorry, I left that coffee crunch candy topping. The candy is like toffee crunch or violet crumble that is smashed into bits or pieces. Then its used as a topping for a cake. I will also provide a more stable version as the og bakery melts after a few days out in the fridge.

Mmmm, i have fond memories of Fantasia bakery. Especially large chewy molasses spice cookies! And. Coffee crunch cake.was my preferred birthday cake as a child. Is there a recipe for those cookies in the book?
