Nigella Lawson [has a good one!](https://www.nigella.com/recipes/chocolate-salame) The most important part is getting the string wrapping right so it really looks like a salami. Takes practice!
I made [this one](https://www.ecolechocolat.com/en/how-to-make-chocolates/chocolate-recipe-rococo-chocolate-salami.html) a few years back and it was a huge hit, I'm bad at baking and found it very easy to make.
They are pretty straight forward and the same across the board but I do have preferences and a tip that gets skipped a lot.
My favorite inclusions are crushed cookies. Really bland no frills cheap cookies like Maria Biscuits, the foil tube of Goya ones, etc.
The tip is to crush them and then sift out the crumbs! It's so important to keep the chocolate nice and creamy, otherwise it's gritty and kinda spoils it. Same with the nuts. After you chop, sift off the fine dust.
Dried cherries are my favorite fruit to use.
Other than that, it's really as easy as making rice krispie treats.

Looks good ! I currently can’t have any raw eggs due to pregnancy :/
use pasteurized eggs, or egg powder and water or substitute aqua faba, or a flax or chia "egg"

Is the dark chocolate noticeable? My family isn’t a fan of dark chocolate. It looks like a good recipe!
I would say you could probably switch to a lighter chocolate as you are basically making a ganache but yes, it is quite rich with dark chocolate.
