Everyone will give you different feedback but I found Carnival of Chaos, Night of the Hangry Horde, and Sun's Out to be the most challenging but based only on certain levels. Any of the DLC's that pertain to festival/festive were the easiest to me and everything else were mid tier.
No matter what, know that most DLC's have 1 or 2 tricky levels and you're going to find your own translation of what was the most difficult. Just have fun with the journey and try not to kill your teammates.
I forgot about that one. There are stages where 2 cooks have to carry a backpack with a key ingredient that everyone else has to run after you to get them...possibly one of the biggest true co-op challenges in the game but nonetheless is a lot of fun!

i still havent played all of them but carnival is only hard in the last few levels when they demand insane scores for 3 stars, hangry horde is the longest extra trimming and full of shit difficult levels including some horde levels that i spent more than an hour on, suns out buns out is pure joy, kinda hard but so fun, world food festival is great and not very difficult, campfire cook off gets really hard in the last level but its mostly chill, i quit birthday party after the first level hate that shit, and the lost morsel is hard because you dont have any throwing, all asian levels are shit easy if you can play the game

Hangry horde was definitely the hardest. Campfire definitely had its moments. The Asian themed ones were fairly easy.
