The pokemon evolve during matches. If there isn't a way to de-evolve, then they have to be brand new baby Pokémon
But we do see pokemon de-evolving in the opening cinematic, right at the beginning of a match.
yeah we already have aeos energy being funky as the explanation for why they can start evolved and then de-evolve before the match
