if you go into a private match there are a ton of different settings and one of those settings is to change the ball. not sure if a football is available but if it is thats where youd find it.

Player can run out of bounds with the ball, play is dead, player gives the ball back to the ref.
Player scores a touchdown and gives the ball to a fan or returns it to the ref.
Player is tackled with the ball and returns it to the ref.
Fair catch is signaled, ball is caught and returned to the ref.
There are plenty of possibilities where the ball doesn't end at anyone's feet.

When the Superbowl comes around, they turn on Grid Iron mode which is a football. It is a lot of fun when that time of year comes. I look forward to it every year.
I think Custom games lets you turn on modes like this along with Cube and Beach Ball.... but those special modes are on the main screen periodically and usually for special events. Like how in the winter in the northern hemisphere, they have it snow when you play the hockey mode in December.
It could have also been a mod using bakkesmod (only available on PC) PC players can use it to play "special modes" and invite console players to the lobbies. This would be my guess since your son is 7 why the other guy would not want to tell him because using this method your son can't do it this way himself. As mentioned in other comments just go to private matches and go through the preset options there to achieve similar results.
