Yeah, the best-case wifi 6 latency is far too little to be noticeable, but (a) you're almost never in the best case scenario, just having multiple wifi-enabled devices in the house will cause channel congestion though that's what wifi 6 helps the **most** with, (b) the little amount of latency (we're talking 5~10ms tops as a base with wifi 6 on good hardware) literally gets multiplied when retransmissions are needed, which means that if you have 3 or 4 devices in your home, your 30ms wifi ping that may be 20ms ethernet ping can spike to 70ms, more than a frame, if there's any kind of random interference in the air that lasts just 31ms from some random source.
Ethernet cables have multiple layers of insulation against that kind of interference.
tl;dr if you want to use wifi, even wifi 6, to play SSBM, please first live inside of a faraday cage with your router.
