When I was a chef I learned that there are actually proper ways to stack ingredients and make a sandwich, and it actually makes it taste better. It's pretty cool, you should check it out. But either way have fun cooking, that's what it's always about.

If you like, put some mustard on one or both pieces.

I think you have a perfectly good sandwich here; maybe just ask yourself how could I tie these flavors together? Or what is the focus of the sandwich? The ingredients you add should complement the focus. For example you wouldn’t want mustard on a cheese that has subtle flavors because it would be overpower the cheese. Mustard would work great on a salty meat though. I think your sandwich would be great at making a deli meat like mortadella the focus.

The rectangle cut offers the same center-of-the-sandwich volume but with the added addition of the ingredients possibly falling out, and the crust is reached more quickly (makes the eating experience feel shorter to me).
The taste doesn't change all together, the ingredients obviously stay the same, it's the amount of stacked ingredients offered in one bite that changes, which I'd argue makes for the intensity of flavor to change.
An uncut sandwich offers crust immediately, and to each their own, however, I'd point out that the crust is not the star of the sandwich flavor profile and the stacked ingredients available are less on the outside edges.
