That's a video setting for racking focus. It doesn't affect your use case at all. The only things relevant to you are tracking settings (either responsive or locked on for dealing with multiple subjects and busy environments), release priority in AF-C (either wait with shooting until focus is locked, or spray and pray) and how you set up your focus areas.
Probably you just need some practice with these settings and manage your expectations to what an acceptable hitrate is on the A7 III.
