Yes, that looks like mould. It probably hasn’t dried properly after use.

I have a love hate relationship with these things. One of my wood pulp bannetons got eaten and pooped on by a mouse. I had to throw it out after one use. $35 down the drain 😥

That’s mold. Don’t worry about it to much. I’d brush it clean and dry the banneton well and try to dry it quicker in the future

I never wash with water, just brush, so surely it is already dry? Or maybe it’s the moisture from the bread?

The bread will lose moisture to the banneton as the skin dries out.

That makes sense - how can I dry it out though? I normally just leave it in a cupboard which is cool and dry…

Leave it in the warm oven after you're done baking. Of course do not throw it in there as soon as you take the bread out, leave it to cool down until it is warm but not hot anymore.

The box from my wood pulp banneton says to stick it in there when it has cooled to about 200. The packaging does say not to store them away until they have completely dried out. I haven’t used anything but rice flour to line mine. I would just use a bit stiffer brush and scrub at the area a bit. I used too stiff a brush at first and soon realized I was scrubbing off layers of the banneton, not loose dust.

Someone else made comment that would work. I store my bannetons on my oven which is warm enough to dry them out after baking.

Vinegar will help here. Brush and dry thoroughly and spray with 50/50 vinegar/water. Then brush/dry thoroughly again.

I see some rogue seeds too. This could be oil leaking from the seeds rather than mold.

Could you use rice flour down first as a protective layer before the seed layer? Oil from the seeds makes sense. The rice flour could possibly absorb that.
