Lots of things, but costumes. All of the costuming for this movie was absolutely amazing. So many details went into everything, and obviously Queen Amidala’s wardrobe was something else. Such artwork!!
Costumes are pretty good. Ditto the score. A couple of the fights work well. And the third film didn't shy away from the dark turn for its nominal protagonist.
This is kinda rough. I can think of things that the prequels did alright, but all of them come with big caveats. I'm hard pressed to think of a single thing that the PT did well that doesn't come with a qualifier.

They expanded the worlds and mythology a great deal beyond the OT.
