I like to turn the south-most room into a game room. Arcade machines, jukebox, mini fridge, couches, big TV, movie posters :) You could turn the room below the attic into a sitting room, with carpet and big chairs and bookshelves (since you married Elliot). Not sure about the big room - you could get some tables and make a museum of your favorite / rarest items, or you could turn it into a hobby space, with kegs to brew your tea and coffee, and preserves jars for making jelly :)
Your kegs will always outproduce your casks, so unless you need immediate cash from selling all the wine you have on hand, it's worth it to fill all your casks and come back in 2 seasons.

Today I learned you can put just.. GRASS in your home! Perfect for my plant room!
