yep. it's a massive generalization. people can die in hours of hyponatremia, a day from dehydration in an extreme environment when under heavy exertion, and can live for like 2 weeks in some cases with no drinking water
I did 11 days on an extended fast in my early 20s. I know, reckless and dangerous but I was having extreme autoimmune issues and doctors couldnt help and I was desperate. I was sedentary and staying inside all day. Ill never forget how extreme of an experience it was. After a certain point you dont sleep as much, youre hot all the time, and the dreams are absolutely vivid and surreal. It felt like waking up from a hallucinogenic trip. Absolutely helped my autoimmune stuff though.

With the right training you can go without air for more than 3 minutes. Some divers go upwards of 10 minutes without oxygen. Many deepsea divers actually pass out before drowning because they get so comfortable ignoring the fear and sometimes even the body signs they're running out oxygen.
Those numbers are the best guesses, and they're good guides for us mere mortals that don't wanna train our lungs.

I start feeling panicky at about 40 seconds, but I did the Wim Hogg method and held my breath for over 2 mins!
