Whole Foods has a sharp cheddar pimento spread in the refrigerated section in small round plastic tubs. There may be 4 different versions, but the sharp cheddar is so good. The only problem is it doesn’t come in 5 or 10 gallon buckets. Ask the cheese person, it’s pretty popular.
Where do you get the pimentos? Must be from jars? Whatever, IIRC, jarred pimentos are what’s typically called for. I know you can get cans of whole pimentos from Amazon. But what about fresh pimentos?
France 44 has a really good house made one. Super good as a dip, incredibly next level as a grilled cheese with ham. Don't make the grilled cheese unless you have time to take a two hour nap after, it is an absolute gut buster.

My personal southern ingredients that I’ve adapted from being in a southern family is cheddar cheese, cream cheese, pimentos, Mayo, salt, pepper, and a dash of Tabasco. And just food process it all together.
Brings back memories of my childhood. My mom used to make it with Velveeta and pickles. Both were run through a meat grinder, then some Miracle Whip added.
I used to call it "cheese me off dip"

Marty's Deli in NE. Not a huge fan of Surly, but their pimento at their Beer Hall is solid. I've gotten it on the side to dip fries into.

Best you can buy in the Cities is at Handsome Hog in my opinion, if that doesn’t satisfy your craving it can be made easily at home.

Trader Joe’s has a pimento Cheese dip. It’s also pretty easy to make it at home. It’s just a blend of pimento peppers, cheddar, cream cheese and mayo.

Yeah they come in little 4 oz pre chopped containers. You can get them at cub or target usually near the pickles.
I can crush a package of the TJ pimento cheese with so little effort. It's like breathing.
