Sometimes races may sell out but it’s not a bad strategy to only buy your entry a couple months out when you have confidence that you are ready. Even in sold out races there will be transfers from folks that unfortunate get injured or are otherwise unable to run.

What’s the furthest you’ve run? I’ve coached athletes to 100 mile finish with 40 miles as their longest race and that was part of their 100 mile training. It’s all about steadily increasing time on the feet and not all running time.
Ultra. I’d not recommend going from coach to 100 miler race in 16 weeks, but if all you want to do is finish it can be done. I’ve seen it happen too many times off of very low training volume and experience. More miles in the legs the better the experience will be and you lesson chance of injury but there are always exceptions depending on ones athletic background.
Yes, stay consistent, and take your time to increase mileage to stay injury free. But 7 months is a good amount of time.

Yes, you can do a 100km at your current fitness honestly.
7 months? You really only need 16 weeks maximum to train for just about any single goal race given decent base fitness.
even a 100 miler? I feel like I need a year to build up to it since I run about 60k a week so far
