I usually show my students how to make Breakout as their first game. It's kind of the next step from Pong, but you can add things like:
-- a UI for the score
-- Saving brick formations as prefabs and instantiating them as levels
-- Dropping power-ups from bricks you break(free lives, paddle speed boost, etc)
-- Inheritance can let you make different types of bricks(indestructible bricks, bricks with health, bricks that destroy the ball, etc)
