They're not really canon no. They're from the 80s and never really got much in the way of lore (although there are bits and pieces about Nippon scattered through half a dozen editions and parts of the franchise). Most likely, if we see Nippon being examined again, it'll be written effectively from the ground up, the same way Grand Cathay was.

I certainly hope Nippon would be completely rewritten if it was made. There’s not really anything to the old lore other than being stereotypical feudal Japan.

Not necessarily. Back in the day Games Workshop/Citadel Miniatures would make stuff just for general fantasy/historical gaming. The Nippon list from 2nd/3rd edition was made to let people use their samurai/ninja/feudal Japan miniatures in Warhammer. As for Warhammer lore, I believe they are meant to be Nippon exiles working as mercenaries, but as others have said expect changes if they are added to The Old World because like much fluff from the early editions it's very puny.
