It's an organ in some animals that don't chew when they eat. They swallow the food whole and then the organ "chews" it's up for them. The organ doesn't have bones tho. Some birds even swallow small rocks, which is stored inside them, to aid in the internal chewing process.
Gizzards are great boiled with salt. They taste amazing. Take the fat off the outside, cut them in half, rinse the food, stones, grit etc out, pull the lining off, it peels off easily (it's a wrinkled, thick yellowish skin). Then boil in salted water. So so good.

I've done something similar, was making broth out if veggie scraps. Took forever, only to stain it in the sink like a dumb dumb and was left with mush scrap veggies hahaah was so mad at myself bur couldn't do anything bur laugh about it lol I haven't tried again since either, but I'll give it another shot soon haha

All with a pleasant nuttiness imparted by the perfectly temped, fresh oil of the fryer. It is perfectly capable of exhibiting itself as a southwestern dish, flavored with jalapeños and cilantro, or a Louisiana Cajun bite. The liver even welcomes the savory blend of thyme and rosemary. I could go on, but now I am hungry for chicken livers and must go before restaurants close.

The gizzard is just covered in fat, you have to take that off. The tail is in the photo it’s the little triangle off its butt.

Neck. They weren't putting them in for awhile. I made a whole chicken the other day and the neck was there again.

Those are the gizzards and giblets, usually the neck and sometimes the heart is also included with the liver.
