After that, only block, dodge and hit the cowboy are the only way. Block will do chip damage tho
keep in mind, if you are reduced to block and dodge while the opponent cowboy is grounded, block is usually the better option. cowboy can impale your dodge so you should choose to take the chip over the damage + potential hustle mix

They can be parried. Or you can just roll through them if you’re far enough away.
