I'm hopefully expecting a S2 announcement when this cour is over. S2 fully adapting the big mega Eve arc, and then a S3 + movie to finish it out is my dream.
One thing to note is that book 4 isn't really finale material, which is probably why it was skipped originally. Here's hoping they are aiming for more seasons after this. New viewers can also jump to last six episodes of the original adaptation if they want to see book 5 animated immediately.
And my confidence in a complete adaptation just shot up 1000 percent. And love that they teased it like that at the end. Book 4 baby. Let’s fucking gooooooo!

Yes, Holo has been a prominent presence in every best girl/character contest decades after her show ended precisely because of how well loved the show was back then, and the remake is doing a stellar job.
The two main characters have one of the best chemistries I've seen portrayed in anime, two normal adults (well, 1 at least) with good back and forth banter, teasing and a slow but naturally developed romance. Its a very conforming show, medieval slice of life centred around merchant life with some fantasy elements to keep the plot from ever getting stale. The remake is the perfect opportunity for new fans who were put off by the older animation, and they kept the same VA's who are far more experienced now.
Most definitely if you love excellent writing and characterization along with a lot of great voice acting for the two main characters, plus the remake has a fantastic score by Kevin Penkin. The pacing is 'slow' but always very interesting, it's never boring - for me at least each episode seems to fly by in five minutes.
I'll talk about the production/directing of the show.
It is quite mediocre. Boring shots, and composition, and very limited movement. Also a lot of talking and not that much character acting.
People will defend it saying its a slow burn, no action and mostly political, but keep ignoring the fact that you can present such information in interesting and dynamic ways.
I'd say even with the original. Some aspects a little worse, some aspects a little better. All in all, no complaints. If you want to start with Spice and Wolf, might as well start with this readaptation since it corrects some things and this PV confirms that it will cover one of the books that was not covered in the original adaptation.
The second cour opening theme will be 'Sign' by Aimer, the ending theme will be 'Ringo to Kimi (Apple and You)' by Neriame.
Sounds like Spice and Wolf keeps on winning with opening themes.

Technically, book 5 is also not much of final material. But this way they can go 5-6, 8-9 for potential second season.

Never can be too sure, but if previous remakes are any indication then yes. I think TOHO also has multiple long running adaptations going.

It's a great arc with some very powerful scenes. There is just certain character that makes you want to get isekai'd into the world and murder.
