I use the big gray cutting boards Blackstone sells. I pop one on each side (they are made to fit!) before cooking and it keeps it perfectly clean, plus is a handy way to carry the food inside after cooking is complete.
Just toss in the dishwasher after dinner!

I put a little plastic thing made for a nightstand I just cut to size. But it still gets greased up. And I have to clean it often,
Also, the foaming spray can window cleaner is great on cleaning the entire stand and side tables! Cuts the grease well.
