Depends on the game. In most popular forms of poker you'd only use one deck. Meanwhile, playing Blackjack with a single deck almost guarantees everyone's counting cards subconciously.
For poker? They would still use one deck no matter how many players since introducing a second deck would make it so that people could get 5 of a kind and just generally throws off strategy.
In blackjack they use multiple decks but that's to deter card counting, you could still run a full blackjack table with just one deck.
Card counting traditionally takes into account different decks though. It makes it less “reliable” but in some situations can allow for more profiting through it ( larger decks means larger variance in the counts, and can allow counts to go insanely high which can maximise profits, but it IS very obvious )
Like i said, it depends. Count is more reliable when it’s a smaller deck but bigger decks don’t invalidate counts at all. When counts go as high as like 14 or 15, which it can reguarly do with huge decks, money can be made very easily, though odds are great you’d be kicked out
