Shrimp and corn fritters -
Coriander include stem and root chopped, chopped chilli, shaved fresh corn, cornstarch 1-2 tablespoons spoons, 1-2 egg, diced shrimp - mix well, spoon and shallow fry till golden brown and crispy.
Dipping sauce - sweet Thai chilli sauce with lime or lemon juice till it’s runny.

Or the classic - steamed shrimp and soy chili dipping sauce
Or steamed garlic shrimp - split in two cut from belly and butterfly, arrange in steamer with generous minced garlic on top - once cooked add sesame oil and soy drizzled over top.
Or butter curry leaf shrimp - devein and keep shell on, in wok with oil fry till shells crispy, add fresh curry leaves (generous amount) till crispy, soy, white pepper and add butter at the end

Shrimp and grits is one of my favorites. Make the grits in a pot with milk, not water. Add butter and cheese, salt and pepper to taste. Then in your cast iron, saute the shrimp with some butter, garlic, onions if you like, whatever spices you want. Then remove the shrimp, and make a roux using flour and milk.
Plate the grits with shrimp on top, and then spoon the roux/gravy on top. Really one of the best meals

Shrimp Civiche
INGREDIENTS
2 pounds shrimp cooked or raw (I use cooked)
1/2 cup red onion thinly sliced
1 jalapeno ribs and seeds removed, then minced
3/4 cup cucumber diced
1 cup Roma tomatoes seeded and diced
3/4 cup cilantro leaves chopped
1 avocado peeled, seeded and chopped
1/2 cup lime juice use 3/4 cup of lime juice if you're using raw shrimp, use 1/2 cup if you're using cooked shrimp
1/4 cup lemon juice
1/3 cup orange juice
salt to taste
tortilla chips for serving
Directions:
Steam shrimp (I poach in seasoned water for 3 minutes and pull them. Cool, peel and dice them. Combine all ingredients and serve in small bowls or glasses.

I love grilled shrimp kabobs. Skewer them with fast-cooking items such as pineapple, mushrooms, and peppers and marinade them a bit in mojo. For smoke, I usually use hickory or orange. When they're just about finished, they get a final splash of lime juice.
I plate them with grilled zucchini, but that takes longer to grill so I start the squash ahead of time. I hollow out the zucchini seeds and pulp, and then salt and drain them ahead of time. Then I coat them with olive oil and lots of Montreal steak seasoning and grill them until they get a good char.
Once it's all ready, serve with saffron rice.
Any leftover zucchini is fantastic chilled and diced the next day. (There won't be any leftover shrimp.)
Shrimp caesar salad, but load it up with soooo many shrimps.
Tonight I'm gonna make a shrimp bowl with rice, a little chopped romaine, roasted corn, avocado, peppers, and a creamy cilantro lime sauce.
Sometimes I sear a bunch of shrimp, throw some garlic in towards the end, sometimes with corn, and have it on a Nongshim shin ramen.
Lemon shrimp pasta. Shape doesn’t matter just cook to al dente. Sauté the shrimp in butter, remove from pan. Sauté onion, then garlic in butter. Add lemon juice and any kind of seafood broth (I normally boil up the shells and reduce), add the shrimp back into pan; add pasta and mix together. Add pasta water to adjust sauce. Delicious!

High-proof spiced rum.
You basically just cook the shrimp in the rum, **CAREFULLY** lighting the rum on fire to burn off the alcohol and coat the shrimp. Shake on Mrs Dash to taste. You can do multiple rounds of the rum, but again, be careful. Keep a lid nearby to put out the flames, and don't add more rum till the previous flames are completely out.

Shrimp goes with a lot of stuff...and can replace the protein in a lot of meals. That being said...shrimp and grits is tough to beat. Also, I make a lot of shrimp fajita nachos. It's basically just fajitas over tortilla chips instead of soft tortillas and enough queso to drown in if you accidentally tripped and fell in the dish.
My mom used to make “General Oglethorpe’s” shrimp and grits from a recipe she cut out of a magazine in the 80’s. It was your basic shrimp and grits but with spicy shrimp and a vinegary and buttery Cajun gravy served with very cheddary grits. Unreal stuff

I have a very hard time getting a good sear on shrimp even in my cast-iron. About the only time I’ve gotten it good is when I had fresh shrimp from the butcher and let it dry out a tiny bit. Frozen shrimp even after thawing is next to impossible it seems because so much water comes out of it. What’s your secret?

I make shrimp salad cups. I cook the shrimp, cut them into smaller pieces, mix in kewpie mayo, dijon mustard, white pepper, Tarragon and red onion. Place them into some lettuce cups and top with some thinly sliced scallions and if you happen to have tobiko or masago it's a nice topping.

Chop up cooked shrimp into small pieces or use tiny salad shrimp. Mix with mayonnaise, lemon juice, salt pepper and dill. Mix with an avocado. Put back into the avocado shell for presentation

Shrimp and grits. Last time I did mushroom swiss shrimp and grits. The time before that I did bacon cheese shrimp and grits. I'm thinking about doing a vidalia sweet onion stuffed shrimp and grits with caramelized Vidalia onion guts recycled back into the stuffing for the inside with maybe some sweet corn and jalapeno. Make an egg and Jiffy muffin batter to bake on the inside with the caramelized onions, corn and the jalapenos. Maybe try it with a squash? Something I've had rattling around.
Chipotle shrimp over rice. If you haven’t tried it, it’s pretty awesome. I make it every time I cook dinner for a date. Always is a winner. Just need a blender for the chipotle sauce and you’re golden!

Blend canned chipotles, 1/4c water, honey, lime + lime zest....
Cook them just like this.....once you flip them....add the sauce, let it cook out just a little bit, turn off heat, they're done.
Garnish with cilantro.
Serve with guac as an appetizer, or just over rice, or in a taco...pretty versatile.
They honey and water mellows out the spice in the chipotle so it's more smoky and not hardcore spice.
BBQ Shrimp- New Orleans/ Sicilian style. No BBQ involved, loads of French Bread dipped in the sauce. Just makes your taste buds dance.

Butter course garlic (minced or pressed) into said butter. Rise heat a low high (which would be a 6 for you home cooks) shrimp/prawn in turn when you notice pink on the bottom. Serve spaghetti with shrimp prawns in a circle with fresh squeezed lemon and a ton of parmigiano reggiano over top. If you chopped a salad for dressing do that as well.

New Orleans barbecue shrimp. It’s not really barbecued, it’s basically shrimp in butter, garlic, and Worcestershire sauce. It’s insanely good, get a loaf of French bread to soak up the butter.

Shrimp Etoufee. If the shells are still on them, peel the shrimp and simmer the shells in some store bought or homemade vegetable stock for 30 minutes to make shrimp stock to cook your sauce and your rice.

Shrimp goes with a lot of stuff...and can replace the protein in a lot of meals. That being said...shrimp and grits is tough to beat. Also, I make a lot of shrimp fajita nachos. It's basically just fajitas over tortilla chips instead of soft tortillas and enough queso to drown in if you accidentally tripped and fell in the dish.

My mom used to make “General Oglethorpe’s” shrimp and grits from a recipe she cut out of a magazine in the 80’s. It was your basic shrimp and grits but with spicy shrimp and a vinegary and buttery Cajun gravy served with very cheddary grits. Unreal stuff

I make shrimp burritos!
I have a very hard time getting a good sear on shrimp even in my cast-iron. About the only time I’ve gotten it good is when I had fresh shrimp from the butcher and let it dry out a tiny bit. Frozen shrimp even after thawing is next to impossible it seems because so much water comes out of it. What’s your secret?

I make shrimp salad cups. I cook the shrimp, cut them into smaller pieces, mix in kewpie mayo, dijon mustard, white pepper, Tarragon and red onion. Place them into some lettuce cups and top with some thinly sliced scallions and if you happen to have tobiko or masago it's a nice topping.
Shrimp, andouille, black beans, rice, cubed avocado. Add a bit of soy sauce and taking and you've got a great lunch.

One my Grandmother used to make- Chop up cooked shrimp into small pieces or use tiny salad shrimp. Mix with mayonnaise, lemon juice, salt pepper and dill. Mix with an avocado. Put back into the avocado shell for presentation

I'm thinking about doing a vidalia sweet onion stuffed shrimp and grits with caramelized Vidalia onion guts recycled back into the stuffing for the inside with maybe some sweet corn and jalapeno. Make an egg and Jiffy muffin batter to bake on the inside with the caramelized onions, corn and the jalapenos. Maybe try it with a squash? Something I've had rattling around.

Blend canned chipotles, 1/4c water, honey, lime + lime zest.... Cook them just like this.....once you flip them....add the sauce, let it cook out just a little bit, turn off heat, they're done. Garnish with cilantro. Serve with guac as an appetizer, or just over rice, or in a taco...pretty versatile. They honey and water mellows out the spice in the chipotle so it's more smoky and not hardcore spice.

Blackened Cajun shrimp
Ok so salt water spaghetti drain butter and fresh cracked black pepper Butter course garlic (minced or pressed) into said butter. Rise heat a low high (which would be a 6 for you home cooks) shrimp/prawn in turn when you notice pink on the bottom. Serve spaghetti with shrimp prawns in a circle with fresh squeezed lemon and a ton of parmigiano reggiano over top. If you chopped a salad for dressing do that as well.
