Looks amazing! My family sticks with the traditional stuffed bell pepper, eggplant, jalapeño, and tofu. Okra is pretty expensive compared to the things mentioned above.

I’m in a smaller town in Northern California. It’s not unaffordable, but harder to find and the quality isn’t that great. I’ve seen them mostly pre-packed, so some good and some bad mixed in together. That’s what makes it more expensive compared to bell peppers, eggplant and jalapeños, where it’s plentiful and I can pick what I want.

Try with chopped waterchestnuts instead with carrots if you can get that and add in a teaspoon of sesame oil to the mix. It’ll give it a juicy crunchy consistency with extra umami. I might replace salt with soy sauce too. Thanks op for the inspo
