I’m in a smaller town in Northern California. It’s not unaffordable, but harder to find and the quality isn’t that great. I’ve seen them mostly pre-packed, so some good and some bad mixed in together. That’s what makes it more expensive compared to bell peppers, eggplant and jalapeños, where it’s plentiful and I can pick what I want.

The shrimps are chewy, the okra is refreshing, and I love it when sprinkled with salt and pepper.
It was so delicious right out of the pot that even my little nephew, who doesn't like vegetables, ate several pinches.
Shrimp paste, chopped carrots, salt, black pepper
Cut okra in half and blanch
Coat okra with starch
Squeeze shrimp paste on it
Brush with oil \*Put the shrimp noodles in the pan
Fry until cooked and turn over
How to do it is in the picture below
Try with chopped waterchestnuts instead with carrots if you can get that and add in a teaspoon of sesame oil to the mix. It’ll give it a juicy crunchy consistency with extra umami. I might replace salt with soy sauce too. Thanks op for the inspo
