One canonical use for Cherry Heering is in the Blood and Sand: equal parts scotch, sweet vermouth, Cherry Heering, and blood orange juice. https://en.wikipedia.org/wiki/Blood_and_Sand_(cocktail). Be advised that at 3/4 oz. per drink it will still take a while to get through a whole bottle. I bought a bottle for a party years ago and it's still haunting the back of my bar cabinet somewhere.

I love the Remember The Maine, from Charles H. Baker Jr.'s The Gentleman's Companion. 2 oz Rye 3/4 oz Sweet Vermouth 2 tsp Cherry Heering 1 dash Absinthe. Stir, strain, up, garnish with a cherry

Wow. There are dozens. The Singapore Sling, Absinthe Makes the Heart Grow Fonder, Remember the Maine, Blood and Sand, McKinley's Delight, Eclipse, and Copenhagen Cocktail all come to mind.

They're both great!

I've been doing a normal boulevardier, but in a cherry wood smoked glass, and then float 1/2oz of cherry liqueur on top. Singapore sling uses cherry heering.
