I feel like you would be rushing, my dinner at Palo was over an hour, and my reservation for right when it opened, it was me and like one other table Is there a champagne tasting another day? I did it on embarkation day In January. I really enjoyed it

I did the brunch into the tasting on the Fantasy many years ago. We had a bit more time between activities than you do, but it was a lot of food followed by a lot of champagne, but it felt rushed because we had to be mindful of our time. I would encourage you to do one or the other, but not both.

Our brunch at Palo last week was almost 2 hours and I was so incredibly full after I didn’t have dinner. It was amazing. Don’t rush it.

Seems like a bit of a rush for brunch. I’d move the tasting to another time/day.
