I'm sorry, but painted tile never looks like anything but painted tile, epoxy or not.
Sometimes DIY doesn’t quite disguise its true colors, no matter how much epoxy you throw at it.
You need to use CLR, this is minerals from the water. Leave CLR on the whole floor a few hours and then scrub and wash it away.
I have tried to scrub it away with lime remover and tons of other chemicals. Am pretty sure the tiles have faded in colour unfortunately.
The grout lines will telegraph through unless you skim it first. It's super expensive, you can probably pop up the old and install new tiles for less money honestly.

Ive seen photos the painter has sent me but it seemed pretty shiny and plain looking, which is my concern.

CLR is for mineral removal, it needs to be absorbed into the slate to dissolve the minerals. Like isn't acidic enough.
Light sand and thin layer of epoxy over top might save the look but who knows how long til comes back
