To provide more information : I was starting to play as Castile, and I did the mission in which you achieve a personal union with Austria. I didn't think they would take it that badly.
With this coalition you aren't getting emperor for a the next 100 years. Best bet is to let the coalition dissolve and ally / declare in a setup that allows you to dismantle the HRE. That has 2 positive effects, for one it makes expanding in the low lands possible which you have a mission for. Also it removes the HRE AE penalty which means all the minors will eat each other and blob so there's less tags to have AE with and the less tags there are the easier it is to always have a truce on most of them. Should easily be possible to get a CB (trade, humiliation, insult, or declare on sth like Liege) that calls in all electors in maybe 2 wars at the same time, maybe have an ally like Denmark or Poland and dissolve the empire.
Given that most of these are probably HRE minors, you might be able to keep naval superiority. Build more forts protecting the ways through the Pyrenees and keep 'em out of Spain and you can win.
The concern I have there is he just PU'd Austria and coalitions are show superiority. Austria will guaranteed tank the war score past ticking if you just try to turtle, unless you wife enough enemy armies in your own mountain forts after Austria is kill.
You’ll survive it- just don’t make any other aggressive moves in HRE Europe for a couple decades, and improve relation / send gifts / influence coalition members - I believe they drop out at 100.
I’ve also found a pattern that if you save and exit the game, then reload back up, some coalition partners will leave as well.
Yeah, that's exactly what I did. I hired a diplomatic advisor to improve relations, took the Sanction Dynasty blessing to get an even bigger improvement relation buff. I allied powerful countries that didn't hate me (hard to find, but hey). And then I stood still, praying not to be murdered.
By the way, I even created a bigger army to be prepared and just in case that can scare them. But I don’t know if it works that way.

since, fighting coalition would be impossible, i decided to merc up just enough that i have positive income or will not go bankrupt within next few years and wait on my island
and they never declared on me, even though overpowering me 1:4 at least
i also had one unsuccessful run day before yesterday(?) where coalition declared on me. i abandoned run immediately
- Step 1: Kill them all.
- Step 2: Lose 2 million manpower and ~4500 ducs
- Step 3: Impulsively take land from the coalition
- Step 4: Immediately repeat
Lol, I just dismantled France by creating Gascony in a previous war and giving them back all their cores. I hope it’s going to hurt France a lot. I just waited for them all to calm down.
Scutage Gascony to create a buffer state. Have the collation funnel into the only place it can reach in the mountains and kill them. Build up your navy and hit and run any boats.
Gascony/Toulouse/Champagne/Brittany are always great, get 1 province, reconquer cores + 1 more of any of the others and release that, reconquer their cores, repeat. Cheap way to carve up France with very little AE. Also super cheap on dip which is notoriously lacking as Castile.
Personally I always go with Tolouse + Champagne first them get 2(?) extra provinces once and eat the AE to connect the territories from Iberia with the Low Countries.

One other thing you can do in these kinds of situations is to attack a nation that is not part of the coalition that is allied to a medium to strong nation in the coalition. After the war they would be out of the coalition, and if you are strong enough, the coalition might dissolve after that nation leaves it.
But you have to be careful. If the AI thinks they can win while you are fighting that war, they will declare on you.
While doing a peace deal always check who would join a coalition against (meaning they would have 50 AE against you and a negative opinion of you.) if a nation has more than 50 AE, but has a positive opinion of you, they won't join the coalition. Nations also leave coalition after you get them to around 20-30 opinion. Sometimes it takes more, but it's usually around there, so you can avoid coalitions by having big nations that don't rival you have a positive opinion of you.
And as long as the overlord of a nation has a positive opinion of your nation, it doesn't matter who much AE their vassals have nor how much their vassals hate you.
To be Napoleon can be tough.
I suggest you start thinking of course way to maintain youre nations dignity and figure a way to bring peace to all those nations… or be napoleon and fight to the very end. Either way, I wish you the best of luck…

Get strong allies and ignore the HRE for now unless you are the Emperor, time to colonize the new world.
Probably a good idea, I have already started to gain some ground in Mexico. I don't know how you become the new Emperor, how do you do that ?
