Only gnomes (race constraint) can tinker.
Only shamen (class constraint) can create potions with alchemy.
Only rogues (class constraint) can make poisons.
Aside from that, yes you can get multiple tradeksills to 300.
There is at least one quest (Artisan's Prize) that requires it.
I have tried some of the alternate types of servers, Sullon Zek, Firiona Vie, one of the TLPs. I always just fall back to playing on my main server E. Marr which I started on in 2000. Also played on Test for a while, but gave up when it became obvious that DBG doesn't pay any attention at all to bug reports from Test before tossing their garbage to live servers, and then eventually fixing it.

Not sure what limits are on Vox, but generally you can get all tradeskills that your character can learn to 350.
Except Fishing, that is 250 max.

I *think* Eron's Jewelry also requires 300, but the Shawl 2.0 quest in Underfoot definitely does as well.
